Beemster® Young Mature Cheese Sandwich with Roasted Tomatoes

Lunch dish. Serves 4. Prep time: 25 min.

Ingredients

  • 250 g cherry tomatoes
  • 1 tbsp olive oil
  • 4 whole-grain rolls or other bread of your choice
  • 6 slices of Beemster® Young Mature
  • 30 g arugula

Prepare

  1. Preheat the oven to 200 degrees. Rinse the cherry tomatoes and let them drain. Place the whole tomatoes in a baking dish. This will keep them nice and juicy on the inside.
  2. Drizzle the olive oil over the tomatoes and season with salt and pepper. Toss to coat everything evenly.
  3. Place the baking dish with the tomatoes in the center of the oven and roast for about 15 minutes, until the skins start to soften. Then remove the tomatoes from the oven and let them cool slightly.
  4. Cut the rolls in half, spread with (cream) butter if desired, and then top with 1.5 slices of Beemster® Young Matured.
  5. Divide the cherry tomatoes and arugula among the rolls. Enjoy your meal!

Cooking tip
In this recipe, we use Beemster® Belegen. Of course, you can also use other Beemster® cheeses—feel free to choose your favorite.
