Cheese naan with Beemster Young

Main course. 4 pieces. Preparation 30 min. + 1 hour and 25 min. waiting time

Ingredients

  • ½ tsp granulated sugar
  • 6 g instant yeast
  • 160 g flour + extra to dust
  • ½ tsp salt
  • 60 ml full-fat yogurt
  • ½ tsp sunflower oil
  • 100 g Beemster Young
  • 2 tbsp ghee
  • 1 small clove of garlic
  • 7½ g flat parsley

Prepare

  1. Heat 60 ml of water over low heat to lukewarm. Put the water with the sugar and yeast in a bowl and let stand for 10 min. If no foam layer has formed after 10 min, then the water was too hot or the yeast is too old. Then make the mixture again.
  2. Place the flour and salt in a large bowl and stir to combine. Add the yeast mixture, yogurt and sunflower oil and knead by hand into a smooth dough in about 8 min.
  3. Cover the dough with a damp tea towel and let it rise for 1 hour in a pleasant, draft-free place until it has doubled in volume.
  4. Divide the dough into 4 equal portions e n make into balls. Place them on a baking sheet lined with baking paper, cover with cling film and let rest in a pleasant place for 15 min. Meanwhile, grate the cheese.
  5. Place a ball of dough on a floured work surface and roll it out into a round piece about 12 cm Ø. Place 1/4 of the cheese in the center and fold the edges of the dough over the cheese towards each other, press together to form a pouch and then form another ball. Roll out the filled ball of dough into a flat, oval sandwich about ½ cm thick. Make the other rolls in the same way.
  6. Heat a cast iron skillet over high heat. Fry the naan in sections about 2 min. until golden bubbles form and the dough is cooked. Flip halfway through.
  7. Meanwhile, melt the ghee in a saucepan. Meanwhile, finely chop the parsley. Turn off the heat, grate the garlic over it and add the parsley. Brush the fried naan on both sides with the melted ghee and serve immediately. Delicious with curry!
