Pasta salad with Beemster Grass cheese

Main course. 4 persons. Preparation 20 min.

Ingredients

  • 250 g orecchiette (pasta)
  • 200 g fresh peas
  • 300 g broccoli
  • 400 g cherry tomatoes
  • 15 g fresh basil
  • 10 g chives
  • 1½ tbsp apple cider vinegar
  • 4 tbsp. olive oil extra virgin
  • 200 g Beemster® Vakantiekaas Belegen

Prepare

  1. Cook the pasta according to the directions on the package until al dente. Meanwhile, cut the broccoli into small 1½-inch florets. Add the broccoli and peas to the pasta during the last 3 min. of cooking time.
  2. Meanwhile, halve the tomatoes lengthwise. Chop the basil and chives as finely as possible. Mix the vinegar, olive oil and herbs into a dressing and place with the tomatoes in a large salad bowl. Cut the cheese into ½-inch cubes and keep aside.
  3. Drain the pasta and vegetables in a colander, collecting one cup (50 ml) of the cooking liquid. Drain well in a colander. Mix the still warm pasta and vegetables with the tomatoes and dressing. Season to taste with salt and pepper. Add some cooking liquid and finally spoon in the cheese cubes.  

Preparation tip
You can also use frozen garden peas, just cook them with the pasta for 1 min.
