Creamy pasta with Beemster Signature Pumpkin Spice and Beemster X-O-

Main course. 4-6 pers. Preparation 5 min. + 30 min. oven time.

Ingredients

  • 300 g pasta of your choice
  • 100 g Beemster Signature Pumpkin Spice, grated (divided)
  • 50 g Beemster Signature X-O-, grated
  • 1 bottle squash, peeled and diced into 1.5 cm cubes
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp flour
  • 500 ml of milk
  • 1 tsp mustard
  • Salt and pepper
  • Fresh parsley, finely chopped

Kitchen Stuff:

  • griddle
  • Blender or hand blender
  • Oven dish
  • Frying pan

Preparation:

  1. Preheat the oven to 200°C. Line a baking tray with baking paper.
  2. Mix the diced pumpkin with olive oil, salt and pepper and place on the baking sheet. Roast in the oven for 20 minutes, until the squash is soft. Puree half of the pumpkin and set the rest aside.
  3. Cook pasta according to package directions. Drain and set aside.
  4. Melt the butter in a large saucepan over medium-high heat. Add the flour and stir for 1 minute. Add the milk and keep stirring until the sauce becomes thick and coats the back of a spoon, about 5-6 minutes.
  5. Remove the pan from the heat and stir in the mustard, Beemster Signature X-O, pumpkin puree and 80 g cup Beemster Signature Pumpkin Spice. Stir until the cheese is completely melted.
  6. Mix the pasta and the rest of the diced pumpkin into the sauce and place everything in a greased baking dish.
  7. Sprinkle with the remaining cup of Beemster Pumpkin Spice and place the dish under the grill for 5-7 minutes, until the top is golden brown and bubbling.
  8. Garnish with fresh parsley and serve immediately.
