Beemster® Croque Maman with Beemster® Belegen by Susan Aretz
Lunch dish. 4 persons. Preparation 30 min.
Ingredients
- 15g butter
- 15g flour
- semi-skimmed milk
- 1 tbsp Dijon mustard
- 150 grams Beemster® Belegen, grated
- 4 fresh bagels
- 4 slices of ham
- 4 slices Beemster® Belegen
- 4 eggs
Prepare
- For the Beemster® cheese sauce, melt the butter, without letting it color, in a saucepan. Mix in the flour with a whisk. Let it cook for a minute, this will take the flour taste out of the sauce. Then add, dash by dash, milk while you keep stirring with the whisk. The heat will cause the sauce to thicken. This is exactly what you want.
- How much milk you need for your cheese sauce depends a bit on how thick you like your sauce. This is a guideline: if you cover the back of a spoon and draw a line in it that stays visible, your basic sauce is thick enough. Then nicely stir in the grated Beemster® cheese and let the cheese melt. Taste your Beemster® cheese sauce to know if you like it cheesy enough. Finally, season with mustard, salt and pepper.
- Time to continue preparing the Beemster® Croque Maman. On one half of your bagel goes the ham and on top of that you place another slice of sliced Beemster® Belegen. Spoon a good spoonful of the cheese sauce on top. Then you put the top of the bagel on top. Top that with another good spoonful of the Beemster® cheese sauce and some more grated Beemster® cheese.
- Place the bagels in a baking dish (covered with baking paper), place in the preheated oven and leave for 13-15 minutes. The top of the bagel with cheese should be nicely golden brown and the cheese will be perfectly melted.
- Finally, fry an egg to make it a real Croque Madame, ehrm Croque Maman. I chose quail eggs, but of course it can be done with any kind of egg. Place your fried egg on top and serve immediately.
