Beemster Queso Fundido dip

Ingredients

  • 1 small onion
  • 2 red bell peppers
  • 1 tbsp olive oil
  • 225 g chorizo sausage, crumbled
  • 100 g jalapeño peppers (jar), drained
  • 225 g Beemster Belegen 48+, grated
  • 225 g mozzarella
  • 50 g fresh cilantro, finely chopped

Prepare

  1. Preheat the oven to 175°C. Dice the onion and peppers. Heat the olive oil in a skillet over medium-high heat. Fry the onion, chorizo sausage, jalapeño peppers and half the bell bell pepper for 5-7 min, or until the chorizo is golden brown and the onion and bell bell pepper are soft.
  2. Spread half of the Beemster Belegen and half of the mozzarella over the bottom of a baking dish. Spread the chorizo, onion and bell pepper mix on top and sprinkle with the remaining cheese.
  3. Bake in the oven for 15 min, or until the cheese is melted and bubbling. Sprinkle with the rest of the red bell bell pepper and cilantro.

Serving tip

This dip is delicious with tortilla chips. Be sure to also try it with vegetables and crusty toasted bread.
