Croissant waffle with Beemster Young

Brunch breakfast dish. 4 persons. Preparation 20 min.


  • 4 unbaked buttercream croissants (frozen, thawed)
  • 2 avocados
  • 10 g chives
  • 6 slices Beemster Young
  • 6 free-range eggs
  • 40 g butter

  1. Bake the croissants in the waffle iron. Meanwhile, slice the flesh of the avocado and finely chop the chives. Cut 2 slices of cheese into pieces.
  2. Break the eggs over a bowl and whisk briefly with a fork. Sprinkle with salt and pepper. Melt the butter over medium-high heat in a nonstick skillet. Pour the egg into the pan, turn the heat to low and stir constantly so that it does not stick to the pan. Keep stirring so that the egg solidifies evenly throughout. Stir in the sliced cheese. Turn off the heat when the egg is half solidified. The heat from the pan will cause the egg to solidify further and the cheese to melt. Keep stirring.
  3. Cut the rest of the cheese slices into strips and roll up. Divide the scrambled eggs, chives, croissant wafers, avocado and cheese slices among pretty plates and serve immediately.
