Cheesy breakfast cookies with buttermilk and Beemster Old

Breakfast/brunch dish. 10 pieces. Prepare 10 min + wait 30 min + 20-25 min oven time.
Ingredients
- 170 g flour
- 170 g whole wheat flour
- 2 tsp baking powder
- ½ tsp baking soda
- 1 tsp salt
- ½ tsp sugar
- 120 g cold butter, in pieces
- 240 ml buttermilk
- 75 g piece of Beemster Old 48+
- 1 egg

- Glass or plug of approx. 7 cm
- Baking paper
Prepare
- Preheat the oven to 190C. Cover the baking tray with baking paper. In a bowl, quickly mix the flour, whole wheat flour, baking powder, baking soda, salt, sugar and chopped cream butter with your fingers to form a fine crumbly dough. Stir in the buttermilk.
- Finely grate the cheese and mix 50 g into the dough. On the floured work surface, make a piece of dough 2 cm thick. Using a cutter or glass of about 8, cut out cookies.
- Make another 2 cm thick slice of the dough residue and cut out 2 more rounds.
Place all the cookies on the baking sheet. - Beat the egg and brush the cookies with egg. Sprinkle with the remaining cheese.
Bake in the oven for 20-25 minutes until cooked and golden brown.
