Korean corn dog with Beemster Young

Snack. 8 pieces. Preparation 30 min. + 1 hour and 10 min. waiting time

Ingredients

  • 80 g fine granulated sugar
  • 7 g instant yeast
  • 400 g wheat flour
  • 1 tsp salt
  • 2 eggs
  • 4 hot dogs
  • 240 g Beemster Young
  • 200 g panko
  • 1½ liters of sunflower oil
  • 4 tbsp ketchup
  • 4 tbsp. Kewpie mayonnaise

  • 8 chopsticks
  • Fryer
  • Skimmer

Prepare

  1. Heat 200 ml of water over low heat until lukewarm. Put the water with 20 g sugar and the yeast in a bowl and let stand for 10 min. If no foam layer has formed after 10 min, then the water was too hot or the yeast is too old. Then make the mixture again.
  2. Combine the flour, 40 g sugar and salt in a large mixing bowl. Beat the eggs. Make a well in the center of the flour mixture and add the yeast mixture and egg. Mix with the hand mixer from the center until a thick batter forms. Add an additional 50-100 ml of water if the batter is too thick. Cover the mixing bowl with cling film and let it rise for 1 hour in a pleasant, draft-free place.
  3. Meanwhile, cut the hot dogs widthwise into 4 equal pieces, cut off the round ends, you will not use these. Cut 16 pieces of cheese the same length and width as the hot dog pieces. Prick each chopstick lengthwise alternating 2 pieces of hot dog and 2 pieces of cheese. Put the panko on a large flat plate. Heat the oil in the frying pan to 175 °C.
  4. Put the batter in a tall cup. Dip a skewer into the batter each time and swirl around, making sure the cheese and hot dog are completely covered. Carefully roll the skewer through the panko and carefully lower into the deep fryer. Do not deep fry more than 2 skewers at a time. Deep fry 3-5 min until light brown and crispy. Remove the corndogs from the fryer with a slotted spoon and drain on a plate lined with paper towels. Repeat with the rest of the skewers.
  5. Sprinkle the corndogs with the rest of the sugar and zigzag the ketchup and mayonnaise on top.

Tip

Korean corndogs are also delicious with mustard.
