Stewed pear chutney with Beemster Royaal Grand Cru

Ingredients

  • 400 g stewed pears
  • 3 shallots
  • 2 tbsp mild olive oil
  • 1 cinnamon stick
  • 4 cloves
  • 75 g granulated sugar
  • 200 ml fruity red wine
  • 300 g Beemster Royaal Grand Cru

Prepare

  1. Peel the pears and cut them into quarters. Remove the cores and cut the pears into 1-inch cubes. Chop the shallots.
  2. Heat the oil in a saucepan over medium-high heat. Sauté the shallot for 2 min. Add the pear and sauté for 1 min, stirring frequently.
  3. Stir in the cinnamon stick, cloves and sugar and deglaze with the wine. Put the pan on the lowest heat and simmer for 45 min with the lid on, stirring occasionally. Remove the lid from the pan and let the liquid reduce for another 15 min.
  4. Spoon the chutney from the pan into a large bowl and let cool for 10 min. Mash coarsely with the masher and let cool in the refrigerator for another 1 hr.
  5. Meanwhile, cut the cheese into 2-inch cubes. Serve the chutney with the cheese cubes.

Preparation tip

Prefer no alcohol? Then use grape juice instead of red wine. No Beemster Royaal Grand Cru available? The chutney is also delicious with Beemster Oud.
