Puffed sweet potato with Beemster Goat Cheese

Main course. 4 persons. Preparation 10 min. + 1 hour oven time

Ingredients

  • 4 sweet potatoes (about 200 g each)
  • 2 slices Beemster goat cheese
  • 12 Kalamata olives
  • 2 sprigs of thyme
  • 2 tbsp pistachios

Prepare

  1. Preheat the oven to 200 °C. Scrub the potatoes clean and prick a few times with a fork all around. Spread them out on a baking sheet lined with baking paper and bake in the center of the oven for about 50 min. until tender.
  2. Meanwhile, cut the cheese and olives into 1-inch pieces. Gather the leaves from the thyme sprigs and mix together. Coarsely chop the pistachios and set aside.
  3. Remove the potatoes from the oven after 50 min, cut the unpeeled potato lengthwise, but not quite in half.
  4. Spread the goat cheese mixture over the indentations in the puffed sweet potato. Sprinkle with the pistachios and bake in the center of the oven for another 10 min.

Serving tip
Serve with a nice salad to make it a full main course.
