Green goddess sandwich with Beemster 30+ Belegen

Ingredients

  • 15 g dill
  • 15 g flat parsley
  • 2 avocados
  • 200 g full-fat yogurt
  • 1 tbsp extra virgin olive oil
  • ½ cucumber
  • 8 slices of whole wheat bread
  • 100 g spinach
  • 6 slices Beemster 30+ Belegen
  • 15 g sprouts

Kitchen Stuff

  • Measuring cup
  • Hand blender
  • Thin peeler
  • Toaster


Prepare

  1. Finely chop the dill and parsley. Cut the avocados in half, remove the stone and scoop out the flesh from the skin. Place the yogurt with 1 avocado and the olive oil in the measuring cup and puree smooth with the hand blender. Stir in the herbs and season with pepper and salt, if desired.
  2. Cut half the cucumber lengthwise with the peeler into long, thin strips. Cut the second avocado into thin slices. Toast the sandwiches in the toaster.
  3. Place 4 slices of bread side by side on a cutting board. Spread these slices with half of the herb spread.
  4. Successively divide the spinach, avocado, slices of Beemster 30+ Belegen cheese, sprouts and cucumber among the sandwiches.
  5. Spread the remaining sandwiches on one side with the rest of the herb spread and place on top of the other sandwiches. Cut in half diagonally and divide among 4 plates.
