Green goddess sandwich with Beemster 30+ Belegen
Lunch dish. 4 pers. Preparation 20 min.
Ingredients
- 15 g dill
- 15 g flat parsley
- 2 avocados
- 200 g full-fat yogurt
- 1 tbsp extra virgin olive oil
- ½ cucumber
- 8 slices of whole wheat bread
- 100 g spinach
- 6 slices Beemster 30+ Belegen
- 15 g sprouts
Kitchen Stuff
- Measuring cup
- Hand blender
- Thin peeler
- Toaster
Prepare
- Finely chop the dill and parsley. Cut the avocados in half, remove the stone and scoop out the flesh from the skin. Place the yogurt with 1 avocado and the olive oil in the measuring cup and puree smooth with the hand blender. Stir in the herbs and season with pepper and salt, if desired.
- Cut half the cucumber lengthwise with the peeler into long, thin strips. Cut the second avocado into thin slices. Toast the sandwiches in the toaster.
- Place 4 slices of bread side by side on a cutting board. Spread these slices with half of the herb spread.
- Successively divide the spinach, avocado, slices of Beemster 30+ Belegen cheese, sprouts and cucumber among the sandwiches.
- Spread the remaining sandwiches on one side with the rest of the herb spread and place on top of the other sandwiches. Cut in half diagonally and divide among 4 plates.
