Breakfast tarts with beemster 30+ Young Belegen

Breakfast/lunch/brunch dish. 4 pers. Preparation 10 min. Oven time 20 min.


Ingredients

  • 4 large green asparagus
  • 125 g cherry tomatoes
  • 4 slices Beemster 30+ Jong Belegen
  • 4 slices of frozen puff pastry (thawed)
  • 4 free-range eggs

Kitchen Stuff

  • Measuring cup
  • Hand blender
  • Thin peeler
  • Toaster


Prepare

  1. Preheat the oven to 200°C. Halve the asparagus lengthwise and widthwise. Also halve the cherry tomatoes and the slices of cheese. Divide the cheese slices, asparagus and tomatoes among the puff pastry, leaving room for the egg.
  2. Break an egg over each slice of dough. Sprinkle with salt and pepper.
  3. Bake for 15-20 minutes in the center of the oven.

Preparation tip

Make sure the asparagus is in a square on your puff pastry so the egg stays in between.
