Dutch mac 'n cheese with Beemster® Extra Belegen

Main course. 4 persons. Preparation 20 min. + 8 min. oven time

Ingredients

  • 200 g Beemster® Extra Belegen
  • 350 g sprouts
  • 300 g macaroni
  • 80 g butter
  • 50 g flour
  • 600 ml of milk
  • ½ tsp nutmeg
  • 200 g back ham
  • 30 g panko (breadcrumbs)

Prepare

  1. Grate the Beemster® Extra Belegen. Cut the sprouts into thin slices. You can also use a food processor for this. Cook the macaroni according to the instructions on the package until al dente. Add the sprouts during the last 2 min. Drain.
  2. Meanwhile, melt 50 g of butter in a saucepan and add the flour once the butter has melted. Cook while stirring until the mixture starts to turn light brown. This will take about 3 min. Add the milk little by little. While stirring, bring to a boil over medium-high heat and cook until a thick, bound sauce forms. Add a the nutmeg and grated cheese and stir until melted.
  3. Dice the back ham and also add. Add the macaroni and sprouts. Season to taste with salt and pepper.
  4. Put the oven on the grill setting. Put the mac 'n cheese in a 20 x 30 cm baking dish. Sprinkle with the panko. Cut another 30 g butter into small pieces and spread over the panko. Place the dish with mac 'n cheese in the oven for about 8 min. until the top turns golden brown. Keep a close eye that the top does not burn.
