Pasta casserole with leeks and Beemster Royale

Ingredients

  • 300 g mini penne (or other pasta of your choice)
  • 2 tbsp olive oil
  • 250 g minced chicken
  • 600 g leeks (washed)
  • 3 cloves of garlic
  • 2 sprigs of thyme
  • 50 g walnuts
  • ½ chicken stock cube
  • 6 slices Beemster Royale

  • baking dish (20 x 30, greased)

Prepare

  1. Cook the pasta al dente according to the directions on the package. Drain, collect some cooking liquid and drain the pasta in a colander. Preheat the oven to 200 °C.
  2. Meanwhile, heat the oil in a large frying pan and fry the minced chicken until loose. Meanwhile, cut the leeks into 1 cm half rings. Add the leeks to the minced meat and fry for 5 min. Meanwhile, finely chop the garlic, remove the leaves from the thyme sprigs and coarsely chop the walnuts. Add to the minced-pream mixture and fry for another 2 min. Add the cooked pasta and cooking liquid (approx. 125 ml) and crumble in the stock cube. Season to taste with pepper and possibly salt.
  3. Spread half of the pasta mixture over the baking dish and spread half of slices of cheese over it. The cheese may overlap slightly. Repeat with the rest of the pasta mixture and cheese. Bake the pasta casserole for 18-20 min in the oven until the cheese begins to slightly color and melt.

Preparation tip
For a vegetarian version of this pasta casserole, replace the minced chicken with vega(n) roughed meat and the chicken stock with vegetable stock.
