Tosti carbonara with Beemster Royale

Lunch/brunch dish. 2 persons. Preparation 10 min. + 12 min. oven time

Ingredients

  • 2 tbsp olive oil
  • 4 slices of pancetta
  • 5 slices Beemster Royale
  • 4 thick slices of sourdough bread
  • ½ tsp freshly ground black pepper
  • 2 eggs

Prepare

  1. Preheat the oven to 200 °C. Heat 1 tbsp oil in a frying pan and fry the pancetta in a frying pan until golden brown and crispy. Remove from the pan and drain. Save the frying fat. Spread 1 side of the bread slices with the baking fat, place with baking fat facing up on a baking sheet lined with baking paper.
  2. Halve the cheese slices and spread 2/3 of the cheese, the baked pancetta and black pepper on 2 slices of bread. Cover with the rest of the bread slices and spread the rest of the cheese over. Bake in the oven for 10-12 min.
  3. Meanwhile, heat the rest of the oil in the pan with cooking fat and fry 2 fried eggs. Sprinkle with salt and pepper. Remove the sandwiches from the oven and place the egg on top.

Delicious with a rocket salad.
