Ingredients

  • 50 g butter
  • 90 g of flour
  • 250 ml whole milk
  • 50 ml of whipped cream
  • 1 egg yolk
  • 75 g Beemster Signature Pumpkin Spice, grated
  • 75 g Beemster Old, grated
  • Large pinch of salt
  • 1 tbsp everything but the bagel seasoning
  • 1 packet of puff pastry
  • 1 egg beaten loose

Prepare

  1. Preheat the oven to 200 degrees. Melt the butter in a pan, do not let it brown. Add the flour and stir well for two minutes over medium-high heat.
  2. Add one-third of the milk to the mixture and keep stirring. Add the rest of the milk little by little, while continuing to stir. Add the grated cheese and stir until melted. Remove from the heat.
  3. Stir in the egg yolk and whipping cream and add to the cheese mixture. Season with the salt and allow to cool.
  4. Thaw the puff pastry. Put the cheese ragout in a piping bag. Prepare the puff pastry slices and pipe three balls of cheese ragout side by side on one side of each puff pastry slice. Be sure to leave some space between the balls to fold the buns.
  5. Fold in half, leaving the ragout in the center of the roll and cut into three pieces. Press the edges of the rolls well. Spread with beaten egg and sprinkle the everything but the bagel seasoning on top.
  6. Bake the sinter cheese rolls for about 25 minutes in the oven. Note that every oven is different so keep a close eye on the buns.

Serving tip
Serve the sinter cheese flap along with cubes of cheese, gingerbread and other sprinkles on a board for a festive item on the table.
