Skinny dogs with Beemster Belegen 30+

Appetizer. 2 persons. Preparation 15 min.

Ingredients

  • 4 thin chicken sausages
  • 2 vine tomatoes
  • 1 shallot
  • ½ jalapeño pepper
  • 2 tbsp. diced pickles + 1 tbsp. liquid
  • 1 tbsp olive oil
  • 1 head of baby romaine lettuce
  • 50 g Beemster Belegen 30+

Prepare

  1. Heat a grill pan without oil or butter and grill the sausages until done in 8-10 min.
  2. Meanwhile, cut the tomatoes into quarters and remove the seeds. Cut the flesh into small cubes and place in a bowl. Chop the shallot as finely as possible and add. Cut the stem off half the jalapeño pepper. Roll the pepper between your hands so the seeds fall out and cut out the seeds. Cut the flesh into small cubes. Add the pepper to the tomato as well, along with the diced pickles, 1 tbsp pickling liquid from the jar and the olive oil. Mix together.
  3. Remove the leaves from the head of romaine lettuce, wash and pat dry with paper towels. Make 4 piles of the larger leaves so you get 4 "spouts. Place a grilled chicken sausage in each barge. Spread the tomato salsa on top and grate the cheese on top.
