Spaghetti with Beemster cheese meatballs

Main course. 2 persons. Preparation 30 min.

Ingredients

  • 30 g piece Beemster Jong Belegen 48+
  • 2 beef sausages
  • 1 tbsp olive oil
  • 1 clove of garlic
  • 1 onion
  • chili flakes to taste
  • 400 g peeled canned tomatoes
  • 150 g spaghetti
  • a handful of fresh, chopped basil

Prepare

  1. Cut the Beemster Jong Belegen into 11 1 cm cubes of cheese. Remove the skin from the beef sausages and with damp hands turn 11 little balls. Push a piece of cheese into the balls and reseal them.
  2. Heat the olive oil in a frying pan and brown the meatballs over medium-high heat for 4 min all around. Meanwhile, finely chop the garlic and chop the onion. Add the garlic, onion and chili flakes to taste (start with ¼ tsp so you don't catch fire immediately) and fry for 3 min on low heat.
  3. Add the tomatoes and crush with a wooden spoon. Simmer over medium-high heat for about 8 min. Stir occasionally. Season to taste with salt and pepper.
  4. Meanwhile, cook the spaghetti according to package directions al dente. Drain and mix into the sauce. Sprinkle with the basil. Finish the pasta with some extra grated cheese.
