Sandwich with Beemster Young Belegen, chicken breast & chipotle mayo
Lunch dish. 4 persons. Preparation 20 min.
Ingredients
- 8 slices of bread of your choice
- 8 slices Beemster Young matured
- 4 slices of chicken breast
- 100 g grilled bell bell pepper (drained)
- 100 g mayonnaise
- 2 tbsp chipotle sauce
Prepare
- Top 4 slices of bread with a slice of cheese. Spread the slices of chicken breast, grilled bell bell pepper and then the rest of the cheese on top. Place the remaining slices of bread on top.
- Mix together the mayonnaise and chipotle sauce. Brush the tops of the sandwiches each with 1 tsp of chipotle mayo.
- Heat 2 skillets over low heat and place the sandwiches mayonnaise-side down in the pans. Now brush the tops again each with 1 tsp of chipotle mayo. Flip the sandwiches after 4 min when they are golden brown and bake for another 3 min. Remove the sandwiches from the pan and cut them in half. Serve with the rest of the chipotle mayo.
