Fish gratin with Beemster® Belegen by Claudia Damen
Appetizer. 4 persons. Preparation 25 min. + 10 min. oven time
Ingredients
- 50 grams of butter
- 1 leek, washed and cut into half rings
- 50 grams of flour
- 100 ml of whipped cream
- 250 ml of milk
- 150 grams of salmon fillet, cut into cubes
- 150 grams of cod, diced
- 8 large shrimp, cut in half
- 100 grams Beemster® Belegen, grated
- Chives
Kitchen Stuff
- 4 oven-proof jars (or a baking dish)
Prepare
- Preheat the oven to 200 degrees.
- Melt the butter in a saucepan and sauté the leeks over low heat until it begins to soften, season with salt.
- Add the flour, stir and cook for 2 minutes. Add the whipping cream a little at a time, stirring, then add the milk. Bring to a boil until you have a thick sauce.
- Add the salmon, cod and shrimp, season well with salt and pepper, and leave on low heat for a few more minutes until the fish are practically cooked.
- Divide into 4 jars, spread the grated Beemster® cheese on top and bake in the oven until the cheese is melted. About 10 minutes.
- Let cool for 5 minutes, garnish with chives and then serve.
