Fish gratin with Beemster® Belegen by Claudia Damen

Appetizer. 4 persons. Preparation 25 min. + 10 min. oven time

Ingredients

  • 50 grams of butter
  • 1 leek, washed and cut into half rings
  • 50 grams of flour
  • 100 ml of whipped cream
  • 250 ml of milk
  • 150 grams of salmon fillet, cut into cubes
  • 150 grams of cod, diced
  • 8 large shrimp, cut in half
  • 100 grams Beemster® Belegen, grated
  • Chives

Kitchen Stuff

  • 4 oven-proof jars (or a baking dish)

Prepare

  1. Preheat the oven to 200 degrees.
  2. Melt the butter in a saucepan and sauté the leeks over low heat until it begins to soften, season with salt.
  3. Add the flour, stir and cook for 2 minutes. Add the whipping cream a little at a time, stirring, then add the milk. Bring to a boil until you have a thick sauce.
  4. Add the salmon, cod and shrimp, season well with salt and pepper, and leave on low heat for a few more minutes until the fish are practically cooked.
  5. Divide into 4 jars, spread the grated Beemster® cheese on top and bake in the oven until the cheese is melted. About 10 minutes.
  6. Let cool for 5 minutes, garnish with chives and then serve.
