Whole wheat tostadas with Beemster 30+ Young and a quick salsa

Lunch dish. 2 persons. Prepare 15 min.

Ingredients

  • 2 whole wheat wraps
  • 4 candy cucumbers
  • 150 g grilled red bell bell pepper (jar)
  • 7.5 g fresh coriander
  • ½ lime
  • 4 slices Beemster 30+ Young

Prepare

  1. Preheat the oven to 180 °C. Place the wraps on a baking sheet lined with baking paper and bake in the oven for about 10 min to form tostadas.
  2. Meanwhile, cut the cucumber into small cubes of about 1 cm. Drain the grilled bell bell pepper and cut into about 1 cm cubes. Finely chop the cilantro. Scrub the lime clean. Grate the green zest of half the lime and squeeze out half the fruit.
  3. Mix the bell bell pepper, cucumber, cilantro, ½ tsp lime zest and ½ tsp lime juice into a salsa. Season with pepper and salt, if desired. Top the tostadas with the cheese slices and spread the salsa on top.
