Potato gratin with rosemary and Beemster Old

Main course. 4 persons. Preparation 20 min. Oven time 1 hour.

Ingredients

  • 1 kg slightly floury potatoes
  • 2 cloves of garlic
  • 2 sprigs of fresh rosemary
  • ½ tsp freshly ground black pepper
  • ¼ tsp sea salt
  • 250 ml of whipped cream
  • 75 g Beemster Old, grated

  • Oven dish (20 x 20 cm, greased)

Prepare

  1. Preheat the oven to 180 °C. Peel the potatoes and cut them into slices as thin as possible.
  2. Finely chop the garlic. Gather the needles from the rosemary sprigs. Mix the garlic and needles of the rosemary into the potato, sprinkle with the pepper and salt and spread over the baking dish. Pour the whipped cream over it and sprinkle with the Beemster Oud.
  3. Bake the potato gratin under the center of the oven for about 1 hr. until golden brown and cooked. If necessary, cover loosely with aluminum foil after about 30 min. so that the gratin does not get too dark.
