American pancakes with Beemster Belegen and bacon

Breakfast dish. 4 pieces. Preparation 25 min. 

Ingredients

  • 75 g self-rising baking flour
  • ½ tsp baking soda
  • Pinch of salt
  • 1 egg
  • 75 ml buttermilk
  • 100 g Beemster Belegen 48+
  • 1½ tbsp. sunflower oil
  • 50 g bacon
  • 25 ml maple syrup

Prepare

  1. Place the baking flour with the baking soda and salt in a bowl. Using a whisk, stir in the egg, then gradually add the buttermilk while stirring. Coarsely grate the cheese and stir into the batter.
  2. Heat 1 tbsp oil in a large skillet and fry the bacon for about 4 minutes until crispy. Drain on kitchen paper.
  3. Wipe the skillet clean with paper towels. Heat ½ tbsp oil in the skillet over medium-high heat and spoon into it 4 mounds of half the batter. Turn them over after about 3 minutes when the bottom is brown, turn down the heat to low and fry the other side for 3 minutes. Spread the bacon on top and serve with maple syrup.
