Vegetarian cheeseburger with Beemster Young Belegen, grilled onion & pickle

Main course. 4 persons. Preparation 25 min.

Ingredients

  • 1 red onion
  • 2 beef tomatoes
  • 4 hamburger buns
  • 300 g Beemster Jong Belegen 48+
  • 50 g wheat flour
  • 2 eggs
  • 75 g panko (Japanese breadcrumbs)
  • 4 tbsp olive oil
  • 4 tbsp mayonnaise
  • 4 lettuce leaves
  • 8 pickle slices (jar)

Prepare

  1. Cut the onion into thin rings and cut the tomato into thick slices. Cut the rolls in half.
  2. Heat a grill pan without oil or butter and grill the onion rings for 5 min. Turn halfway through. Grill the bun halves 1 min. on the cut side. Meanwhile, cut the rind off the cheese and cut the piece of cheese into 4 equal pieces about 5 x 5 cm and about 2.5 cm thick.
  3. Mix the flour and pepper in a deep plate. Beat the eggs in a second deep plate. Also put the panko in a third deep plate. Pass the cheese slices successively through the flour, roll through the egg and through the panko. Make sure the cheese is completely covered with the panko.
  4. Heat the oil in a large skillet and fry the breaded cheese for 4-5 min over medium-high heat until golden brown and crispy. Carefully turn the cheeseburger halfway through using a spatula and drain on kitchen paper.
  5. Spread both halves of the buns with the mayonnaise. Top the bottom of the buns with some lettuce, a cheeseburger, tomato slices, pickle and red onion. Cover with the top of the buns. Delicious with fresh fries from the oven.
