Beemster Signature Royale Grand Cru madeleines by Susan Aretz

Dessert. 6 persons. Preparation 25 min + 15 min oven time.
Ingredients
- 100 grams of fine almond flour
- 2 tsp baking powder
- small pinch of salt
- 2 sprigs of fresh thyme, leaves only
- 60 grams of finely grated Beemster Signature Royaal Grand Cru
- 2 eggs
- 2 tsp sugar
- 50 grams of melted, unsalted butter
Kitchen Stuff
- madeleine baking tin
- baking spray
- mixer
- piping bag
Prepare
- Preheat the oven to 200 C (top/bottom heat).
- Mix the almond flour with the baking powder, thyme, salt and grated Beemster Sinature Royaal Grand Cru.
- Melt butter and allow to cool. Mix eggs and sugar for 5 minutes on high speed, until fluffy.
- Fold this egg mixture into the almond flour and cheese mixture. Add the cooled butter and spatula it in, but do not mix too long to prevent your madeleines from becoming tough. Put everything in a piping bag and put it in the refrigerator for half an hour
- Grease the madeleine tin with baking spray or brush thinly with melted butter. Using the piping bag, pipe a "sausage" onto the tin, just a little shorter than the cavity of your baking tin. This seems crazy, but trust me; it will turn out fine!
- Then bake your Beemster madeleines for 12-13 minutes in the preheated oven until golden brown and cooked. Remove the tin from the oven and remove your madeleines from the tin, turn over (pretty please!) and let cool on a wire rack. Fresh, they are the most delicious.

Serving tip
