Puff pastry bites with Beemster aged cheese and pistachio pesto & grilled green asparagus by Jannie's table

Starter. Serves 4. Preparation time: 40 minutes.

Ingredients

  • 50 g Beemster® Aged 48+ 
  • 4 sheets of puff pastry
  • 20 green asparagus spears
  • 4 slices of Serrano ham
  • 1 egg yolk 
  • 35 g pistachios 
  • 2 handfuls of fresh basil
  • 1 small clove of garlic
  • 3 tbsp extra virgin olive oil

Prepare

  1. Grate the Beemster® Oud. Put 40 g of the cheese, 25 g of the pistachios, the basil, and the garlic in a food processor. Mix until everything is finely chopped. Add the olive oil and mix again. Season to taste with black pepper and a pinch of salt. 
  2. Cut off the last 2-3 centimeters of the green asparagus. Heat a dash of olive oil in a grill pan and grill the asparagus until tender in 10-12 minutes.
  3. Preheat the oven to 200 degrees.
  4. Let the puff pastry thaw.
  5. Spread the pesto on the puff pastry. Divide the Serrano ham and grilled asparagus over it. Press two opposite corners of the puff pastry together. Brush with egg yolk. Sprinkle the top with the remaining grated Beemster® Oud and the coarsely chopped pistachios.
  6. Place the puff pastry bites on a baking sheet lined with parchment paper. Bake in the oven for 15–20 minutes until crispy.
