Blinis with Beemster® Oud, caramelized pear, and champagne-thyme syrup

Snack dish. 12 pieces. Preparation time: 20 minutes.

Ingredients

  • 12 mini blinis (ready-made or homemade)
  • 100 g Beemster® Aged (cut into small pieces)
  • 2 ripe pears, peeled and cut into small cubes
  • 1 knob of butter
  • 1 tbsp fine granulated sugar
  • 1 tsp honey
  • 75 ml champagne or prosecco
  • 1 sprig of fresh thyme (+ extra for garnish)
  • Optional: edible gold powder or gold flakes

Prepare

  1. Heat the butter in a pan. Add the pear cubes and sugar and cook for 4–5 minutes until soft and golden brown.
  2. Stir in the honey and remove from the heat. Set aside for a moment.
  3. Pour the champagne or prosecco into a small saucepan.
  4. Add the sprig of thyme and simmer gently for 4–5 minutes until reduced to a light syrup. Turn off the heat and remove the sprig of thyme.
  5. Heat the mini blinis briefly in a pan or oven until they are lukewarm. Top each blini with a piece of Beemster® Oud.
  6. Spoon a spoonful of caramelized pear on top and drizzle a drop of champagne-thyme syrup over each blini.
  7. Garnish with a small sprig of thyme and, if desired, a little edible gold powder.
