Blinis with Beemster® Oud, caramelized pear, and champagne-thyme syrup
Snack dish. 12 pieces. Preparation time: 20 minutes.
Ingredients
- 12 mini blinis (ready-made or homemade)
- 100 g Beemster® Aged (cut into small pieces)
- 2 ripe pears, peeled and cut into small cubes
- 1 knob of butter
- 1 tbsp fine granulated sugar
- 1 tsp honey
- 75 ml champagne or prosecco
- 1 sprig of fresh thyme (+ extra for garnish)
- Optional: edible gold powder or gold flakes
Prepare
- Heat the butter in a pan. Add the pear cubes and sugar and cook for 4–5 minutes until soft and golden brown.
- Stir in the honey and remove from the heat. Set aside for a moment.
- Pour the champagne or prosecco into a small saucepan.
- Add the sprig of thyme and simmer gently for 4–5 minutes until reduced to a light syrup. Turn off the heat and remove the sprig of thyme.
- Heat the mini blinis briefly in a pan or oven until they are lukewarm. Top each blini with a piece of Beemster® Oud.
- Spoon a spoonful of caramelized pear on top and drizzle a drop of champagne-thyme syrup over each blini.
- Garnish with a small sprig of thyme and, if desired, a little edible gold powder.
