Cacio e Pepe with Beemster X-O

Ingredients
- ½ pack of bucatini pasta (450 g), or other thick pasta
- 3 tbsp butter
- 2 tsp freshly ground mixed peppercorns, or black peppercorns
- ½ tsp red chili flakes
- 125 g Beemster X-O, grated
Prepare
- Cook the pasta according to the directions on the package.
- Meanwhile, melt the butter in a large skillet and add the peppercorns and red chili flakes. Fry for 1 min, until fragrant. Drain the pasta but save 80 ml of the cooking water.
- Add the pasta cooking water to the pepper-butter mixture and bring to a gentle boil. Reduce the heat to low and add 100 g of the Beemster X-O. Stir until the cheese is melted. Add the pasta and stir to mix. Garnish with the rest of the Beemster X-O.
