Carpaccio wrap rolls with Beemster Royaal Grand Cru

Ingredients

  • 100 g Beemster Royaal Grand Cru
  •  50 g sun-dried tomatoes
  • 4 vegetable tortillas (e.g. carrot or beet)
  • 4 tbsp truffle mayonnaise
  • 120 g carpaccio
  • 30 g arugula

Prepare

  1. Grate the cheese on the coarse side of the block grater. Coarsely slice the tomatoes.
  2. Place a tortilla wrap on a cutting board. Spread with a thin layer of truffle mayonnaise, leaving the edge free on 1 side.
  3. Spread ¼ of the carpaccio just below the center of the tortilla wrap over the mayonnaise. Spread ¼ of the tomato, ¼ of the arugula and ¼ of the cheese on top.
  4. Roll up the tortilla tightly from the side where the mayonnaise is, to the side left open. Cut into slices and divide among a bowl. Repeat with the rest of the tortillas and filling....
