Ingredients

  • 6 slices Beemster® 30+ Belegen
  • 1 zucchini
  • 2 eggs
  • 50 g dairy spread
  • 6 slices of whole wheat bread

Kitchen Stuff

  • Muffin pan with 6 cavities (greased)

Preparing
1. Cut the cheese slices each lengthwise into 3 pieces so that you have 18 equal pieces. Using a thin peeler, shave 18 ribbons from the zucchini.
2. In a bowl, beat the eggs with the dairy spread, pepper and salt, if desired. Preheat the oven to 200 °C.
3. Cut the crusts off the bread, divide between the cavities of the muffin tin and spread the egg mixture over them. Lay 3 strips of zucchini and slices of cheese on top of each other alternately and roll into a rose. Place a rose in each cavity in the center of the egg mixture. Bake in the oven for 20 min until done.

Preparation tip
You can also slice the zucchini and cheese and spoon through egg mixture.
