Cheeseboard pizza with Beemster Young

Ingredients

  • 2 tbsp homemade onion chutney
  • 1 not too large, slightly floury potato
  • 50 g Beemster Young
  • ½ tsp nutmeg
  • 1 ready-made cauliflower pizza crust
  • 50 g red or blue grapes
  • 30 g Beemster Old

Prepare

  1. Haven't made the onion chutney yet? Then start there.
  2. Preheat the oven to 200 °C. Peel the potato and grate coarsely over a bowl. Also grate the young cheese over the bowl. Add the nutmeg and some salt and pepper to taste and mix together. Spread the mixture over the cauliflower pizza base and bake the pizza in the center of the oven for 15 min until golden brown.
  3. Meanwhile, halve the grapes. Remove the pizza from the oven. Spread the onion chutney on top in small scoops. Spread the grapes on top and shave thin slices of aged cheese over the pizza.

Serving tip

A cheeseboard should be accompanied by a nice wine and so should a pizza, so a cheeseboard pizza totally calls for it! A nice hearty and sultry Australian Shiraz is 'spot on' here.
