Adjaruli khachapuri with Beemster Young

Adjaruli recipe

Breakfast/Lunch dish. 4 persons. Preparation 20 min. + 20 min. oven time + 1 hour and 40 min. waiting time

Ingredients

  • 160 ml semi-skimmed milk
  • 1½ tsp granulated sugar
  • 7 g instant yeast
  • 350 g flour + extra for dusting
  • 1 tbsp. sunflower oil
  • 1 tsp salt
  • 250 g Beemster Jong 48+
  • 100 g feta cheese
  • 4 small eggs
  • 20 g butter
  • 5 g flat parsley

Prepare

  1. Heat 150 ml milk with 100 ml water over low heat until lukewarm. Put the milk with the sugar and yeast in a bowl and let stand for 10 min. If no foam layer has formed after 10 min, then the water was too hot or the yeast is too old. Then make the mixture again.
  2. Meanwhile, place the flour with the oil and salt in a bowl and stir. Pour in the milk yeast mixture and knead by hand or with the standing mixer with dough hook for about 8-10 min into a cohesive dough. Cover with cling film and leave to rise for 1 hour and 30 min. 2 hours to rise in a pleasant, draft-free place and double in volume.
  3. Preheat the oven to 210 °C with the baking sheet in the oven. Coarsely grate the cheese. Crumble the feta as finely as possible and mix into the cheese.
  4. Sprinkle the work surface with some flour. Remove the dough from the bowl, knead briefly and divide into 4 portions. Using the rolling pin, roll out each portion into an oval shape about 22 x 17 cm.
  5. Spread the cheese mixture over the dough, but leave about 2½ cm from the edge all around. Fold the edge of over and then roll inward until a width of about 8 cm remains in the center and the dough has taken on a boat shape. Pinch the ends of the edge together to form a point and turn a quarter turn. Place the rolls on a sheet of baking paper.
  6. Brush the edges with the rest of the milk. Using the baking sheet, place the rolls on the preheated baking sheet and bake in the oven for about 15 min. until the cheese is bubbling and the bread is golden brown.
  7. Remove the baking sheet from the oven and with the back of a spoon, press a dimple in the center of each roll. Break 1 egg over each dimple and top with 1 tsp of butter. Sprinkle with a little salt and bake in the oven for about another 5 min, until the egg white is set but the yolk is still runny. Finely chop the parsley and garnish the adjaruli khachapuri with the parsley.

Preparation tip

For a vegetarian version, use veggie mince. While you are baking the rest of the tortillas, keep the fried tortillas warm under a lid.
