Sandwich with omelet fried in crispy chili oil by Claudia Damen
Lunch dish. 1 person. Prepare 10 min.
Ingredients
- 1 tbsp crispy chili oil
- 1 stalk of spring onion, cut into rings
- 2 eggs
- 2 slices of bread
- butter
- Beemster® Young Belegen and Beemster® Old (amount to taste)
Prepare
- Heat the crispy chili oil in a frying pan and fry the spring onion with it. Meanwhile, beat the eggs and add to the pan. Fry on both sides until the omelet is cooked.
- Grease the bread with butter, place buttered side down in the skillet and spread the cheese between 2 slices. Keep the heat low, put a lid on the pan and let the cheese melt.
- Fold the omelet in half and place on a slice of bread. Fold the sandwich closed, cut in half and serve immediately.
