Sandwich with omelet fried in crispy chili oil by Claudia Damen

Lunch dish. 1 person. Prepare 10 min.

Ingredients

  • 1 tbsp crispy chili oil
  • 1 stalk of spring onion, cut into rings
  • 2 eggs
  • 2 slices of bread
  • butter
  • Beemster Young Belegen and Beemster Old (amount to taste)

Prepare

  1. Heat the crispy chili oil in a frying pan and fry the spring onion with it. Meanwhile, beat the eggs and add to the pan. Fry on both sides until the omelet is cooked.
  2. Grease the bread with butter, place buttered side down in the skillet and spread the cheese between 2 slices. Keep the heat low, put a lid on the pan and let the cheese melt. 
  3. Fold the omelet in half and place on a slice of bread. Fold the sandwich closed, cut in half and serve immediately.
