Beemster cheese egg with chili crisp

  • 1 slice Beemster Extra Belegen
  • 2 tsp chili crisp in oil
  • 1 free-range egg
  • 1 to 2 slices of bread
  • 1 handful of lamb's lettuce
  • 1 tbsp spring onion (in wafer-thin rings)


  1. Heat a small nonstick skillet. Halve the slice of cheese and place the two halves on top of each other in the center of the pan. Fry for 1 min until the cheese melts slightly. Spread 1 teaspoon chile risotto over the edges and break the egg over it. Fry until the egg white is solidified and the edges are crispy.
  2. Meanwhile, toast the slices of bread. Spread some lettuce, the egg, the rest of the chili and spring onion on top and serve.
