Loaded cheesy Beemster nachos by Susan Aretz

Ingredients

  • 500 grams of minced meat (vega)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • ½ tsp chili powder (or a little more if you like spicy)
  • ½ tsp salt and pepper
  • 1 can of chili beans, drained (collect the liquid)
  • 150 grams grated Beemster Belegen
  • 200 grams of salted nachos
  • 1 tomato, in small cubes
  • 1 avocado, in small cubes
  • 1 red onion, in thin rings
  • 1 tbsp. jalapeño peppers (from a jar)

  • Refractory pan
  • Oven dish
  • BBQ

Prepare

  1. Heat your barbecue to 175 C (direct) while you prepare the rest of the ingredients. Place a barbecue-proof pan on the grill of your barbecue and let it get warm. In it, fry the minced meat, without oil, until loose and then drain off any excess fat/moisture. Season the minced meat with the spices and add the liquid from the chili beans. Stir everything together.
  2. In a barbecue-proof dish, put the nachos and spread the minced meat, the chili beans and generously the grated Beemster Belegen cheese on top. Put this on the grill of your hot BBQ until all the Beemster cheese is melted.
  3. Remove the loaded nachos from the barbecue and garnish with a topping of your choice. Of course, with all toppings is also allowed 😉

Preparation tip
Don't have a barbecue? No problem! Fry the minced meat in a pan on the stove, put the loaded nachos in an oven dish and place in a preheated oven.
