Mini flammkuchen with Beemster Graskaas and truffle mayo

Ingredients

  • 4 small tortilla wraps
  • 125 ml crème fraîche
  • 2 tbsp truffle mayonnaise
  • a pinch of garlic powder
  • 1 medium red onion
  • 100 g mushrooms
  • 100 g cherry tomatoes
  • piece of about 75 g Beemster Grass cheese
  • arugula for garnish

Prepare

  1. Preheat the oven to 200 °C. Spread the wraps on a baking sheet lined with baking paper and bake in the oven for 5 min until crispy. Is your baking tray not big enough? Then bake the wraps in two batches.
  2. Meanwhile, mix together the crème fraîche, truffle mayonnaise and garlic powder. Cut the red onion into half rings, the mushrooms into thin slices and the tomatoes into wedges. Grate the cheese.
  3. Remove from the oven and spread with the crème fraîche mixture. Divide the mushrooms, tomatoes and onion on top and sprinkle with the cheese
  4. Bake in the oven for about another 7 min. Remove from the oven and sprinkle with the arugula. Cut into wedges just before serving.

Serving tip
Delicious with extra lots of truffle mayo.
