Quiche with spinach and yummy Beemster Old

Main course. 8 persons. Preparation 20 min. + 40 min. oven time

Ingredients

  • 1 clove of garlic
  • 1 tbsp olive oil
  • 300 g sliced spinach (frozen)
  • piece of about 250 g Beemster Old
  • 6 slices of puff pastry (frozen, thawed)
  • 8 cherry tomatoes
  • 200 g crème fraîche
  • 3 eggs

Kitchen Stuff

  • grater
  • quiche pan (ø26 cm, greased)

Prepare

  1. Preheat the oven to 200 °C.
  2. Chop the garlic finely. Heat the oil in a frying pan and sauté the garlic. Add the spinach and allow to wilt. Spoon the spinach into a colander and drain well. Squeeze out as much liquid as possible with the back of a spoon. Let cool.
  3. Grate the cheese. Snacking in between is allowed!
  4. Cover the quiche mold with the puff pastry. Halve the tomatoes. In a bowl, mix ⅔ of the cheese with the crème fraîche, spinach, eggs and some salt and pepper. Pour the mixture into the quiche mold. Sprinkle with the rest of the cheese and spread the tomatoes cut side up on top.
  5. Bake in the center of the oven for about 40 min until golden brown and cooked.
