Coal spaghetti with Beemster Extra Old

Ingredients

  • 150 g spaghetti
  • 75 g cat bacon
  • 10 g butter
  • 50 g Beemster Extra Old
  • 3 eggs
  • 5 g celery leaves

Prepare

  1. Cook the pasta according to the directions on the package until al dente. Cut the cat bacon into strips. Heat the butter in a frying pan and fry the bacon until golden brown and crispy.
  2. Meanwhile, grate the cheese. Split the eggs and beat the yolks with pepper. Do not use the egg whites. Stir in ¾ of the cheese. Finely chop the celery.
  3. Drain the pasta and catch a cup of the cooking liquid. Stir the pasta into the bacon and remaining cooking fat in the pan and turn off the heat.
  4. Mix the cheese mixture and some cooking liquid into the spaghetti until smooth. Divide among deep plates, sprinkle with the celery, remaining cheese and pepper.
