Ultimate cheese pancake

Ingredients

  • 300 g wheat flour
  • 1 tsp salt
  • 2 medium eggs
  • 500 ml semi-skimmed milk
  • 12 slices of breakfast bacon
  • 6 slices Beemster Belegen
  • 30 g unsalted butter
  • apple syrup

Kitchen Stuff

  • large batter bowl
  • whisk
  • frying pan with good non-stick coating (=very important with this pancake)

Prepare

  1. Sift the flour with the salt over a large batter bowl. Add the eggs and half the milk and beat with a whisk to make a smooth batter. Pour in the rest of the milk and whisk again until smooth.
  2. Fry the slices of breakfast bacon for about 5 min. in a frying pan without oil or butter. Drain on a piece of kitchen paper. Clean the pan.
  3. Cut each slice of cheese into 3 long strips. Heat a knob of butter in the cleaned skillet and spoon in a ladle of batter. Swirl the pan around so that the entire bottom is covered.
  4. Cook the pancake for 2 min. over medium-high heat until the top is dry and the bottom is golden brown. Turn the pancake over, place 3 strips of cheese on top and fry for another 1 min so that the cheese melts. Now flip the pancake again and fry for about 2 more min. on the cheese side, so that the cheese gets a little crispy. Keep the pan moving so the cheese does not stick. Serve 2 slices of bacon with or on top of the pancake, along with a spoonful of apple syrup.
  5. Bake 5 more pancakes like this. Do eat each pancake as soon as it comes out of the pan, that's when it tastes best!

Instagram tip
Make extra many pancakes to make a pancake cake. Stack the pancakes with slices of crispy bacon in between and drizzle the cake with maple syrup instead of apple syrup. Successful? Take the picture and then cut into wedges.
