Father's Day omelet with Beemster Young Belegen and spring vegetables

Breakfast dish. 4 persons. Preparation 25 min.

Ingredients

  • 100 grams of young celery peas (freezer)
  • 100 grams of green asparagus tips
  • 10 grams of chives
  • 1 bunch of radishes
  • 4 eggs
  • salt and pepper to taste
  • 1 tbsp butter
  • 50 grams of arugula
  • 4 slices Beemster Jong Belegen 48+
  • 8 pieces Bolletje Oerknäck Robuust Volkoren

Prepare

  1. Place the young celeriacs in a bowl with the green asparagus tips and pour over with plenty of boiling water. Let stand until use.
  2. Finely chop the chives and slice the radishes.
  3. Beat the eggs lightly in a bowl with the chives and salt and pepper.
  4. Heat half the butter in a frying pan and pour in half the egg. Fry the omelet over low heat until the top is just dry.
  5. Spread half of the cheese, arugula, radishes, asparagus and peas on top and fold the omelet in half. Repeat with the rest of the ingredients.
  6. Serve the omelet with vegetables right away, serve with the Oerknäck crackers.
