Homemade cheese salad with Beemster Royaal Grand Cru
Drinks dish. 6-8 servings. Prepare 15 min + 12 min oven time.
Ingredients
- 1 spelt baguette with sourdough (bake-off) or other baguette of your choice
- 3 tbsp mild olive oil
- 200 g Beemster Royaal Grand Cru
- 1 shallot
- 10 g chives
- 50 g sweet and sour pickles + 2 tbsp. pickle juice
- 1 tbsp (coarse) mustard
- 3 tbsp mayonnaise

Prepare
- Preheat the oven to 190 °C. Cut the baguette into thin slices and place in a large bowl. Drizzle with the oil and season with pepper and possibly salt. Gently spoon over, without breaking the bread, and spread on a baking sheet lined with baking paper. Toast the buns in 10-12 min until light brown and crispy, remove from the oven and let cool.
- Meanwhile, grate the cheese on the coarse side of the block grater and place in a large bowl. Chop the shallot, finely chop the chives and add.
- Cut the pickles into small cubes and add with the pickle juice, mustard and mayonnaise to the cheese in the bowl. Mix well and season with black pepper.
- Put the cheese salad in a serving bowl and place it on a large platter. Place the crostinis around the cheese salad on the platter.
Preparation tip
Replace the crostinis with the ready-made variety if you're short on time. No Beemster Royaal Grand Cru available? Then replace it with Beemster Oud.
