When spring has begun, cows are allowed to go out again, nature permitting. This means the start of grazing. A special moment for the cows and their farmers.
For the cows, the first moment of going outside is a celebration. Jumping through the field, they taste the first grass of the year!
Milk from cows eating the first spring grass is packed with protein. And you can taste this!
Cows that regularly graze outside get a more varied diet and more exercise, which contributes to their well-being and high-quality milk. You can taste this in our Beemster cheeses!

At Beemster, we often talk about our RMO (Riding Milk Receipt). These are the milk trucks that collect the milk from our farmers. Since 2023, the first electric milk truck for Beemster cheese has been driving around collecting milk in the region around Beemster.
The milk from the cow that has eaten fresh spring grass is collected by the RMO, which takes it to the cheese factory. There it is made into cheese by artisanal methods.

Grass cheese is here again!
In our cheese factory we make the creamiest cheese from the milk of the first pasture. We do this in the traditional way where we still manually stir the curd.
The first milk from this tender spring grass gives Graskaas its special soft, fresh sour taste. They don't say for nothing that this cheese tastes "like spring"!
When the Graskaas has matured sufficiently, the cheese is inspected by our cheese master Sjoerd. Only when Beemster Graskaas meets his requirements, the cheese reaches the stores.
