Beemster® 2-person shot board
Drinks dish. 2 persons. Preparation 40 minutes.
Ingredients
- 150 g Beemster® X-O, diced
- 1 small container of mustard
- 2 slices Beemster® Goat Cheese on 8 toasts
- 100 g mixed nuts
- 50 g pearl onions
- 50 g cornichons
- 500 g red onions (for the onion chutney)
- 1 tbsp olive oil (for the onion chutney)
- 1 bay leaf (for the onion chutney)
- 1 tsp coriander seeds (for the onion chutney)
- 3 tbsp red wine vinegar (for the onion chutney)
- 1 tbsp. light caster sugar (for the onion chutney)
Prepare
- Peel the onions, halve them and cut into half rings. Heat the olive oil in a frying pan and fry the onions with the bay leaf and coriander seeds over low heat for about 25 min. until the onions are caramelized. Stir frequently.
- Meanwhile, place the 6 other products on a serving platter.
- Add the vinegar and sugar to the onions and heat for another 5 min. Season the chutney with salt and pepper. Remove the bay leaf and put the chutney in a well-cleaned (jam) jar. Allow to cool. You can store the chutney you have left over sealed in the refrigerator.
