Beemster 2-person shot board

Drinks dish. 2 persons. Preparation 40 minutes.

Ingredients

  • 150 g Beemster X-O, diced
  • 1 small container of mustard
  • 2 slices Beemster Goat cheese on 8 toasts
  • 100 g mixed nuts
  • 50 g pearl onions
  • 50 g cornichons
  • 500 g red onions (for the onion chutney)
  • 1 tbsp olive oil (for the onion chutney)
  • 1 bay leaf (for the onion chutney)
  • 1 tsp coriander seeds (for the onion chutney)
  • 3 tbsp red wine vinegar (for the onion chutney)
  • 1 tbsp. light caster sugar (for the onion chutney)

Prepare

  1. Peel the onions, halve them and cut into half rings. Heat the olive oil in a frying pan and fry the onions with the bay leaf and coriander seeds over low heat for about 25 min. until the onions are caramelized. Stir frequently.
  2. Meanwhile, place the 6 other products on a serving platter. 
  3. Add the vinegar and sugar to the onions and heat for another 5 min. Season the chutney with salt and pepper. Remove the bay leaf and put the chutney in a well-cleaned (jam) jar. Allow to cool. You can store the chutney you have left over sealed in the refrigerator.
