Beemster veggie goat cheese toasti

Lunch dish. 1 person. Prepare 10 min.

Ingredients

  • 2 slices of bread
  • 2 slices Beemster goat cheese
  • 2 green asparagus
  • 1 candy bell pepper
  • ½ shallot
  • 1 tbsp mayonnaise

Prepare

  1. Top 1 slice of bread with 1 slice of goat cheese. Cut the woody bottom off the asparagus and halve them lengthwise. Place the asparagus on top of the goat cheese.
  2. Slice the sweet bell pepper and place on top of the asparagus. Finely chop the shallot and sprinkle on top. Top that with another slice of goat cheese and the second slice of bread.
  3. Heat a frying pan over medium-high heat. Brush the outside edges of the sandwich with the mayonnaise and fry the sandwich for 6-8 min until golden brown. Turn halfway through and put a lid on the pan if necessary. Turn down the heat if the sandwich gets too dark, but the cheese is not yet melted.
