Breakfast burrito with scrambled eggs with Beemster Young Belegen

Breakfast. 4 pieces. Prepare 10 min + 5 min oven time.

Ingredients

  • 4 soft flour tortillas
  • 4 eggs
  • 50 ml of milk
  • 20 g green herbs (e.g. parsley, tarragon and chives) of your choice
  • 25 g butter
  • 8 slices Beemster Jong Belegen 48+

Prepare

  1. Preheat the oven to 200 °C. Heat the tortillas according to the instructions on the package. You can also do this in the frying pan instead of the oven.
  2. Beat the eggs with the milk and salt and pepper to taste. Finely chop the herbs and mix into the egg.
  3. Melt the butter over low heat in the skillet and fry the egg mixture in it over low heat. Stir frequently and do not let the egg color. It is ready when the egg is set but still moist.
  4. Top the warm tortillas with 2 slices of cheese each and spread the scrambled eggs on top.
    Fold the sides of the tortillas inward and roll up as tightly as possible. Cut in half diagonally.
