Stuffed eggs with Beemster X-O

Drinks dish. 4 Persons. Preparation 9 min. + 1 hour cooling + 10 min. preparation.

Ingredients

  • 20 pieces
  • 10 eggs
  • 2 tbsp orange fries sauce (or regular)
  • 1 tbsp creme fraiche
  • 75 gr Beemster X-O
  • 1 tsp spicy smoked paprika
  • 1 tsp sambal of your choice
  • 1 tsp white sesame seeds
  • 1 tsp black sesame seeds
  • Salt and pepper

Prepare

  1. Hard-boil the eggs in plenty of boiling water for 9 minutes. Quench in cold water and let cool completely.
  2. Cut Beemster X-O- into mini cubes and keep a few to decorate the eggs with later.
  3. Peel the eggs, cut them in half, scoop out the yolks and put them with the chipotle sauce, creme fraiche, Beemster X-O-, paprika and sambal in a food processor. Whirl until smooth and season with salt and pepper. Put the mixture into a piping bag.
  4. Mix the sesame seeds and dip the flat side of the eggs in the seeds.
  5. Place the half eggs on a plate and spread the egg mixture over the eggs. Finish with some small cubes of XO on the eggs.
  6. You can keep the eggs covered in the refrigerator for a few hours and pop them out when the party starts!
