Grain salad with Beemster Old
Main course. 6 persons. Preparation 35 min.
Ingredients
- 225 g yellow beets
- 225 g red beets
- 3 tbsp olive oil
- 200 g farro (or spelt)
- 200 g quinoa
- 1 bunch of radishes, thinly sliced
- 1 container (25-30 pieces) of cherry tomatoes, halved
- 70 g pomegranate seeds
- 2 tbsp lemon juice
- 225 g grated Beemster Old
- Fresh herbs/sprouts to garnish

Prepare
- Preheat the oven to 200°C. Peel the beets, cut them in half (cut large beets into quarters) and thinly slice the halves. Place the beet slices on a baking sheet lined with baking paper and toss with 1 tbsp olive oil, salt and pepper. Roast in the oven for 25-30 min, or until the beets are soft.
- Bring a pan of water to a boil and cook the farro for 20 min. After 10 min, add the quinoa. Drain and and rinse cold under running water.
- Combine the grains, beets, radishes, tomatoes and pomegranate seeds in a large bowl. Add 2 tbsp olive oil and lemon juice and toss to combine. Sprinkle with grated cheese and herbs.
Preparation tip
If you can't get pomegranate seeds, you can also use grapes for a sweet twist.
