Lettuce wraps with Beemster 30+ Young Belegen, scrambled eggs and cucumber
Breakfast dish. 2 persons. Prepare 15 min.
Ingredients
- 1/4 cucumber
- 5 g chives
- 4 eggs
- 225 ml semi-skimmed milk
- 1/2 tsp olive oil
- 5 leaves of romaine lettuce
- 4 slices Beemster 30+ Jong Belegen
- 1 tbsp green pesto
Kitchen Stuff
- Baking paper
Prepare
- Slice the cucumber and finely chop the chives. Beat the eggs with the milk and chives and season with salt and pepper.
- Heat the oil in a skillet over medium-high heat, add the egg mixture and stir gently with a wooden spoon until the egg is just set.
- Place 1 sheet of baking paper on a cutting board. Spread the lettuce leaves on this, overlapping them slightly. Slice any hard cores slightly so that the lettuce lies flat.
- Cover the lettuce with the cheese slices, spread with the pesto and spread the scrambled eggs and cucumber on top. Sprinkle with pepper and salt, if desired.
- Including baking paper, roll the lettuce wrap into a tight roll. Cut the roll in half diagonally with a sharp knife and serve.
