Tosti gratin with Beemster Belegen & Oud by Claudia Damen

gratin sandwich with Beemster cheese

Lunch dish. 2 persons. Preparation 1 hour and 10 minutes.

Ingredients

  • 50 grams of butter
  • 150 grams of onions, cut into half rings
  • 3 sprigs of thyme
  • 100 ml beef broth
  • 4 slices of bread
  • A 50/50 mix of Beemster Belegen and Beemster Oud, grated (amount to taste)

Prepare

  1. Heat 30 grams of butter in a frying pan and add the onions. Keep the heat low and stir occasionally; caramelizing onions takes about an hour.
  2. When the onions are brown, add the thyme and beef stock. If necessary, season further with salt. Over low heat, allow the beef broth to evaporate almost completely.
  3. Preheat the oven to 200 degrees (top heat).
  4. Coat one side of the bread with butter. Spread the onions and grated cheese on one slice. Put the other slice on top. Fry the gratin sandwich on both sides in a skillet until the bread is browned.
  5. Spread the rest of the cheese over the sandwich and bake briefly more in the oven, under the grill, until the cheese is melted. Serve the gratin sandwich immediately.
